I am looking to find a set of handlebars that have at least a few extra inches of pullback. Has anyone found an aftermarket set that will work on a V7 Classic without changing the look too much?

I wouldn't be opposed to a riser instead, I just haven't seen one on a V7 yet!

I've got a serious case of too-short arms, and my current riding position is giving me a terrible ache in my neck. Any recommendations?

I have LSL naked bike bars available here from Tom.
They pull back about an inch and a little higher. Looks heaps better also.
Very happy with them.

Tried to get a shot this morning for you. As you can see im a little low in this pic at the clamp.
If you clenched your fist and sat it on top of the original bars then thats close to the extra height. Then about the same amount in pull back. These are alloy also and are way lighter. You will need to use some tape to work out where to drill a 5mm hole for the switchgear locator pin. Cables are all standard and didn't need to be removed. These are the Naked bike bars . I was also looking at the Flat Track bars . Send Tod an email and im sure he will help you choose. Make sure you get the bar ends at the same time also.

Thats perfect! I ordered the handlebars through the dealership I work at, so they came in at a little more than cost (!!!) and will be here by Tuesday. I do have a few sets of bar ends that came with the bike when I bought it, so I'll take a look and see which look better. Thanks for the picture, that really makes it clear, and I'm glad I went with those!
