I am not an expert on the Guzzi engine, but going back to basics, those 4 larger nuts on studs hold the head onto the cylider onto the block so should be torqued first. The small bolt pulls together mating surfaces to make them oil tight so is much less critical and logically should be...
Next time it might be worth removing the stud and refiting it with the appropriate locktite (studlock) to help lock it in place. It will then be less likely to strip.

In uk the garages are also not happy about the bike being refuelled with a rider sitting on the bike as if fuel spills it goes on them.......it must be safer refuelling with the bike on the stand.

Lots of brands of mirrors will fit the standard mirror mounting holes on the controls I have just one mirror, on the rhs as I am in UK, See photo. It comes out a little further than the standard mirror and was one I had from an SR500 yamaha, but it is not a yamaha part.
Unplug the O2 sensors at the connectors under the side panels and try runing like that. If the problem goes it is definately the O2 sensors, options then are new sensors....or just leaving them unplugged

Returned mine to Moto Strada as it would touch they tyre.....i think they may have modified the design now. Otherwise it was all OK, except that road dirt went onto the back of the seat. I closed up the gap on either side of the tool tray with rubber strip.
