I have recently bought a 1980 v50 mk II and have been reading about Guzzis dropping valves.I know this is not a common thing to happen but does anyone know if it only applies to exhaust valves.

Never heard of Gizzis dropping valves. The only valve issue I'm aware of was with the Lario for premature wear, and I think that was a cam problem.

I have not personally seen a dropped valve on a Guzzi. I have seen worn valve guides, but the motor still ran (pretty well, really, only real sign was a little oil smoke).
I have heard about the Lario and its valve issues, as I understand it the worst case scenario is the valve head breaking off and destroying that side. But I own a Lario and that has not happened to me, yet. The other valve worry would be the top of the valve, by the keeper, breaking off and the valve dropping into the motor. I have not heard of a Guzzi motor doing that. Not saying it can't, that can happen to any motor. But I am not aware of Guzzi's being prone to that. And only the 4 valve per cylinder Lario motor is supposed to be "prone" to the first valve issue.
There are people around who deal more in the small blocks than I do, the only small block I own is the aforementioned Lario.

The 4 valve per head Lario do sometimes drop valves. The valves are 2 piece. They will suffer sooner if the engine is pushed hard @ high revs. I've had experience with 3 Larios. None have lost a valve; though one is very low mileage, 2900.0! B~
