My 2001 V11 Sport has a manual fuel s/o valve so that's one potential problem out of the way.
However I was wondering why one is needed. None of my other/previous fuel injected m/cs - BMW K1100RS; Aprilia Caponord; Cagiva Gran Canyon (still have it) had a fuel s/o valve.

Does one need to use said valve or can I just leave it open.

Thanks in advance for your comments.

Well - some do.

BMW K1100RS and Aprilia Caponord have pumps in the tanks.

My 1999 Cagiva Gran Canyon has an external fuel pump.

How was it possible to remove the tank without all the fuel running out on the Cagiva?

I see your point - but all you need to do is pull a hose off and let tanks (2) drain into can. A little messy but a 1/4 fuel line is fairly easy to manage.

Just wondering how other riders of the same fuel systems manage.

Due to a malfunctioning petcock on my 1100 Sport i, I have rarely if ever bothered to shut off the fuel at the tank with no ill effects. I suspect you will find the same. There is little if any tendency for the injectors to stick open AFAIK, and even if they did, there would be next to no pressure behind the fuel from the tank. It's not like a carb'd bike, where parking on a side stand might result in a float sticking and the tank emptying itself. YMMV
