Looking for advice on a St. Lawrence Seaway ride

While I have ridden in New Brunswick, Nova Scotia, Newfoundland and Ontario Canada I was thinking of a ride along the eastern side of the Saint Lawrence Seaway with a lot of time in Quebec. I have plotted out a ride along with a run around Prince Edward Island and I have to do the Cabot Trail again (5th or 6th time). I am including a map of what I have planned depending on if I can get 2 weeks off work. It should be a little over 4,100 miles. I have never been in this area and don't know if I'll get to go again so I was wondering if there is anything in particular I should catch. I will say upfront that my brother is also going along and any sightseeing that takes any long period of time he will nix. Plus we need to do about 300+ miles a day. I have been told repeatedly it will be no problem but my French is about zero. Lucky If I know leaded and unleaded at the pump and Thank you. Any suggestions appreciated.

Only thing I would add is to stay on the western side of the St. Lawrence above Quebec City, rt138 to Baie Staint Paul. Turn right to stay close to the river. Its a small road with wonderful views of the seaway and connects back with Rt138 some 30 mile up. You can get a ferry at Baie Comeau to cross back to the eastern side of the seaway. As for the language, yes lots of people speak English but you will also meet plenty that don't and that's half of the fun.
One other tip, I always stay at Ruth's Village Motel in Belthel Maine when passing through.
