I'd love the look of a scrambler/tracker style... more upright maybe (my back is not a big fan of the sporty fork bars)

I wonder if do I have to buy Guzzi parts or any brand is ok? I'm thinking about bicycle where is easy to replace a bar as long as the standard diameter

what about motorcycles?

look up Rox risers. very high quality find what you want and search the internet. usually $20 cheaper there. I like these because they are infinitely adjustable. revzilla.com/motorcycle/rox-2-pivot-risers-for-78-handlebars
 
I've used Rox Speed risers on a few of my bikes. I'm thinking about getting them for my Breva 750 along with wider Daytona style bars. I tried the cheap risers but they didn't fit without modifcation. They are just aluminum blocks that go into the bay cradle and the bars sit on top of them. Simple concept if they work but Rox risers are a bit adjustable front to back as well.
