I'm new here, just hoping someone can point me in the right direction.

I have a 2016 V7II Special with less than 2500 miles on it. It has lows miles but most of that is city riding.

Recently my fuel indicator turned on earlier than normal. Typically I get about 110-120 miles to the tank but this time it came on at around 80 miles. I refueled the bike, it took less fuel than normal. When I got going again the light did not turn off, and several full shutdowns later, it still has not gone away. The bike rides normally and there are no other problems or other mechanical abnormalities. Does anyone have a suggestion as to why the light is on and if there is anything else I should check?

Does the fuel sensor that sits in the tank work on a "float" system, if so it could be stuck or filled up with fuel and giving erroneous readings.
No, it's a thermistor-based sensor. Something is indeed wrong with the OP's sensor or its wiring. My V7II usually gets about 200 mi on a full tank before the light comes on.

That's interesting. I've never got anywhere near 200 miles to the tank. As I mentioned previously my light normally comes on at about 110-120 miles, I live in San Francisco, lots of hills, lots of stop and go. But that its a big difference between your mileage and what I'm getting.

I'm still sorting out a few things with my bike, but I had two issues at the same time where I something similar happened - 120-130 mile before light came on, then one day started dropping fast.

1) Fuel Filter is half plastic/half metal and the plastic had swelled from the ethanol usage.
2) A valve gasket had unseated or come loose somehow and was allowing for oil to work up and around the valves more than usual as well as dirty up the spark plugs. Oil in the breather box too.

Changing both of those that started getting me to the 135-140 mile range before the yellow light would come on - this is a mix of 75mph riding to the city and then heavy city riding to the canyons and then back home.

I don't know if that is your issue but wanted to give you what was mine.
