Hello,
Sorry if the question is naïve (or repeat) but I've owned a Daytona RS for a while and recently bought a Quota 1100ES.
The Quota had a PCIII installed by an earlier owner and the bike (by the stamped information) seems to have the original ECU.
Does it make sense to buy a Centurion-M to service these bikes, particularly the Quota? I live at 8,800' elevation and don't have access to service within 4 hours. I would like to learn more about improving the running on my EFI bikes versus the V7 Sport I bought in1974.

Yes it does. The software will allow you to view live sensor readings and to set the TPS if required. Do go to the MPH site and get the good information on setting up a Quota. The Quota isn't like the other EFI bikes and has a few peculiarities. Hopefully it has already been done, but if not, http://mphcycles.com/technical/

One other problem with the Quota, many that were delivered had a faulty barometric pressure sensor in the ECU. The ECU should have been replaced under warranty. The PC III may be there to compensate for a faulty ECU, or just because he wanted one. BTW, the Centurion M will tell you what the ECU thinks the barometric pressure is, so you can confirm if that sensor is in specification or not.

I hope to pickup a barely used -M today and am interested to find out what it says. The ECU doesn't carry the warranty upgrade number so I've been assuming it wasn't replaced. I wonder if our La Crosse Technology weather station is calibrated closely enough (resolution to two places) to compare. The Quota was purchased out of Ohio and, at my elevation, appears to be running rich as you'd expect with a carbureted bike - I just don't experience with the EFI systems.

Your rich running at elevation is a good indication the barometric pressure sensor is faulty. With sensor readings if you are close, that is about as good as it gets, it won't be spot on.
