I'd hook up a 47K potentiometer and firstly have a look on what is the total range of the dashboard. If it covers the needed range (doubt it) I'd find a proper thermistor and screw it before the radiator or so.
As it probably won't cover the needed temperature range, I'd put there a 47K multiturn (25 or more turns) potentiometer and do a table of displayed temp vs resistance. Then I'd make some tiny microcontroller project measuring what is the oil thermistor value and feed the needed resistance through some dedicated potetionmeter IC. Maybe some simpler and cheaper pwm solution could work too but it would take some experimentation to decide what the dash must be fed. Of course I would mentally multiply what is displayed by say a factor of 3 (F) or add 100 (C) if it goes to -30, maybe or find some other mental game to asses oil temp at a glance.
